Before opening keep it in your kitchen cabinet: “Best by” Date of 3 years.
After opening keep the Scallop rillettes 3 days in the refrigerator.
The main ingredient
The scallops (Clamys Opercularis) that we select for our rillettes come from wild fishing in the North-East Atlantic Ocean. They are prepared with care in the workshop of our producer Julien, gentle cooking and fraying by hand to preserve the texture and delicate taste of this crustacean. In our recipe, they are associated with certified organic ingredients precisely dosed to sublimate them like the fresh cream from a neighboring farm. If our rillettes cannot be certified organic because we have chosen wild shellfish, Ecocert checks compliance with organic standards in the preparation of the other ingredients of the recipe!

The Scallop rillettes are delicious on a toast with farmhouse bread – or leavened bread.
One jar allows you to make:
10 to 20 small toasts (2 to 3 people).
They can be used in verrines or bread in association with a salad or raw vegetables for example. They also go perfectly with the Mushroom Condiment with Summer Truffle.
One jar allows you to make 3 to 4 big tartines or sandwiches (2 to 3 people).
You can for example:
– make a quiche or a cake to replace commonly used tuna,
– use them in pasta,
– make fabulous verrines
Julien is a young artisan that places importance in the quality of the fish: exclusively local and seasonal species and naturally colouring-food free, conservative free and chemical additives free. His workshop is located at the very end of the Brittany near the ocean. The ideal place to make wonderful jars from the local fishing.
